Whole Grilled Sea bass
For a simple but impressive recipe try our whole grilled sea bass, tastes great done in the oven but even better as an exciting BBQ dish.
Ingredients
1 whole sea bass
1 lime
1 bunch of coriander
1 red chilli
1 star anise
100ml olive oil
Salt
Preparation
Remove fins and tail from sea bass using a scissors.
Score the flesh with a sharp knife 3-4 times on each side. This allows flavours into the meat of the fish.
Season all over with salt.
Slice lime into 10. The ends can be used too. It’s all flavour.
Break up the star anise and chop the chilli. Rip up the coriander.
Place the coriander, star anise, half the chilli and half the lime into the cavity of the fish.
Lay fish onto some tinfoil and then rub 2-3 tablespoons of the relish onto the skin.
Drizzle with oil then wrap up tightly in the foil.
At this point the fish can be stored until you need it in the fridge.
Cook on the BBQ or in a hot oven for 20 minutes.
Serve in the foil. The aromas are amazing when the foil is opened.
