Spiced Roast Carrots
Take your carrots to a new level with our sweet & spicy glaze, guaranteed to please even the worst of veg dodgers! |
Ingredients
500g baby carrots
50ml oil
6 cloves of garlic
1 inch ginger
4 tbsp Baxters Albert’s Victorian Chutney
50g butter
Salt & pepper
30g chopped coriander
Preparation
Pre heat oven to 190°C.
Scrub the carrots and make sure they are free of any dirt.
Place the oil into a deep tray and place in the oven to heat.
Crush the garlic and peel and roughly chop the ginger.
Once the oil is hot add the carrots, garlic and ginger and season. Return to the oven and roast for 10 minutes at. Shake the tray regularly.
Add 4 tbsp of chutney and the butter and cook for a further 10 minutes. The chutney and butter will mix and reduce to give the carrots a nice glaze.
Remove from the oven, sprinkle with coriander and serve.
