Lobster Mac & Cheese
Mac & Cheese is the perfect home comfort, try adding our secret ingredient, horseradish to make it even more delicious! And if you're feeling super posh, add some lobster meat.
Ingredients
200g rigatoni pasta
200g cooked lobster Meat
45g butter
45g plain flour
300ml milk
100ml double cream
200g strong Cheddar
Salt and pepper
30g panko breadcrumbs
Preparation
Cook pasta according to pack instructions.
Melt the butter in a heavy bottomed pan and add the flour. Whisk together to form a roux. Cook out for 1-2 minutes. Mix will resemble chunky breadcrumbs.
Gradually whisk in the milk a little at a time. If you add too much this will create lumps.
Once all the milk has been added, add the horseradish, cheese (reserve a small handful to top) and cream. Whisk until smooth and them season to taste.
Mix in the pasta and lobster with the sauce then transfer to an ovenproof dish.
Top with cheese and the panko breadcrumbs and place under a hot grill until golden.
Serve straight away.
