Glazed Roast Parsnips
To spruce up your Parsnips this Christmas simply coat them in our Relish for a delicious glaze.
Ingredients
500g baby parsnips (or large parsnips cut into large batons)
50ml oil
1 jar of Baxters Pineapple, Coconut and Zesty Lime Chutney
50g butter
Salt & pepper
30g chopped coriander

Preparation
Pre heat oven to 190°C.
Scrub the parsnips and make sure they are free of any dirt.
Place the oil into a deep tray and place in the oven to heat.
Once the oil is hot add the parsnips and season.
Return to the oven and roast for 10 minutes.
Shake the tray regularly.
Add 4 tbsp of chutney and the butter and cook for a further 10 minutes.
The chutney and butter will mix and reduce to give the parsnips a nice glaze.
Remove from the oven, sprinkle with coriander and serve.
