BBQ Beef Brisket
This is a great BBQ dish that can be done in advance of eating, it just needs finished on the BBQ to heat through and give it a delicious sticky glaze.
Ingredients
2kg Brisket
300ml Beef stock
- Dry Rub
1 tbsp chilli powder
1 tbsp mustard powder
1 tbsp paprika
1 tbsp black pepper
1 tbsp sugar
- BBQ Sauce
100g brown sugar
Juice of 1 lime
2 tbsp English mustard
1 Jar of Baxters Spicy Jalapeño Chilli Relish
Preparation
Mix all the dry ingredients together for the rub and then rub all over the beef.
In a small sauce pan heat all the ingredients for the BBQ sauce until the sugar has dissolved.
Place the beef in a deep ovenproof tray.
Mix the beef stock with half of the BBQ sauce and pour over the beef into the tray.
Cover with foil and cook at 150°C for 3-4 hours.
To finish cover with the rest of the marinade and place on the BBQ. Keep turning until the beef has a nice sticky glaze.
Keep your eye on the beef whilst its cooking in the oven, keep adding water if it looks like it’s drying up at all.
