Ingredients
4 ears of corn
1 inch of ginger
1 clove garlic
Juice of 2 limes
Salt and pepper
40g coriander
Preparation
Place in a bowl and add ginger, garlic, lime juice and salt and pepper.
Add corn and coat evenly.
Remove corn and place on a hot grill (or oven).
Cook for 15- 20 minutes until golden and softened, turning every few minutes and brushing with left over marinade.
Sprinkle with coriander and serve immediately.
